Tree Syrup Workshop

  • Saturday, December 12, 2026, 10:00 AM - 1:00 PM

Oswego County has a lot of forest lands that provide potential to increase tree syrup production. New markets have also emerged in recent years where consumers are exploring alternative syrups. This program will provide an overview of the different types of trees that can be tapped for syrup. Discussions will include maple syrup, but also alternative syrups like birch, beech, black walnut, and others.

Adam Wild, Co-Director of the Cornell Maple Syrup Program, will discuss the latest research on tree syrup production, and what to consider when getting started. He’ll also discuss emerging trends in alternative syrups.

Catherine Monserrate, PhD., Research Support Specialist for the Cornell Maple Syrup Program, will discuss the importance of value-added products and how producers can increase their sales.

Afterwards, attendees will tour the CiTi BOCES maple shack led by Morgan Cooper, Agricultural Studies Instructor. Cooper will share about the new Agricultural Studies Program, and the positive impact maple season has on students.

Attendees will also tour Yardley Maple, a family-owned farm that taps 3,000 maple trees. Joseph Yardley will share how his family got into maple production and what he’s learned over the years.

There will be plenty of time for questions and networking.
